Captain Jason and Kate are a fantastic couple, perfectly prepared to provide the ultimate vacation experience. Charming and upbeat, this captain and chef team have changed our industry with their mature and professional approach. They welcome guests aboard in crisp white uniforms, with a big smile and an ice cold hand towel for guests to cool off. They believe that attention to detail and going the extra mile adds a level of sophistication their guests deserve when aboard Dolphin Splash. You have selected one of our industries top captain and chef team.
Better than all his qualifications is the man, Captain Jason. His easy going nature and ‘can do’ attitude makes exploring the Virgin Islands all the more enjoyable. Nothing is to much for him to do for any of his guests. Jason is fully qualified and commercially endorsed as a RYA Yacht Master Offshore, he is an advanced medical certification and full STCW. He holds a diesel engine certificate, and is a licensed Radar and Radio Operator, so guests are in the best hands possible. Scuba certification is close behind.
Kate Fairfield is the talented lady supporting Jason in every way possible. She provides 5 star service ensuring that all the cabins are immaculate through out the week and dinner is served with flare. Kate offers turn down service, canapés at sunset, treats and plenty of little delights to make the day. Both Jason and Kate can pair different wines to meals. She aims to exceed guests’ expectations and create a fusion of Caribbean dishes and home favorites for her guests, and both Jason and Kate can pair the perfect wine to suit different cuisines.
Kate and Jason are completely committed to Dolphin Splash for the next 2 years, so when guests’ book Dolphin Splash they are guaranteed to get this fine team, not some other crew they did not pay for. Kate and Jason both love children and Kate tells me she will set up a small Kiddies Kingdom for the smaller kids when they are on board. I would like the children to feel as much at home with us as our adult guests.
Both Jason and Kate feel that wearing their white uniforms provides their guests with that added sophistication that all guests deserve. It has been small items that have impressed us about Jason and Kate, they are just a cut above the rest.

Lobster tails served with a traditional thermidor sauce, accompanied with flame grilled cajan shrimp, scallops flambé in cognac and panfried calamari rings, and served with saffron infused rice
Tender beef fillet surrounded by roasted vegetables and served with a creamy pepper and red wine sauce and a side dish of Pomme Dauphinoise
Seared Yellow fin Tuna fillets served with flash fried pepper bells, courgettes, yellow squash and chives, glazed in a honey soy sauce and tossed with Orzo
Lamb Shank slow roasted in red wine, garlic and rosemary, and served with garlic crushed potatoes on a bed of wilted baby spinach, topped with vine tomatoes with roasted vegetables, and garnished with deep fried basil leaves
Panfried Mahi Mahi seasoned in Caribbean Jerk spices and served with blanched green asparagus spears tossed in the pan with garlic and topped with a parmesan cream and accompanied with baby potatoes drizzled in butter and herbs
Vanilla Rum baskets freshly made and filled with homemade coconut ice cream and garnished with mint
White chocolate coconut mousse topped with passionfruit curd and garnished with sugar work
