Meet your Sunsplash Catamaran Crew:  Frank and Patty Fabian

Sunsplash FullFrank and Patty began sailing together 19 years ago, when they bought a 30’ monohull sailboat and plopped it in Lake Monroe, outside of Bloomington, Indiana.  Their reasoning for doing so?  It would be their week-end escape from hectic work-weeks and allow them time to pursue together an activity which captured the beauty and serenity of nature; sailing.  Now living aboard their beautiful catamaran,Sunsplash, Frank and Patty are blessed to be exploring the wonders of the Virgin Islands each day, and realizing their dream in sharing this experience with you!

In pursuing their professional careers, in 2000, Frank and Patty (and their sailboat) relocated from the mid-West to Northern Virginia.  Weekends and vacations now found them exploring the Chesapeake Bay and the North Atlantic coast from Virginia to New Jersey.  Most years, they would also charter a sailboat and explore the islands of the Caribbean or the Gulf Islands in the Pacific Northwest.  They knew then that one day they would live aboard full-time and combine their passion for sailing, entertaining and Patty’s culinary talent into an opportunity to share with others the joy of sailing.  

That day came in March 2014, when Frank and Patty sold their home, both cars and most of their possessions, and took delivery of their new Leopard 48 catamaran in Florida.  After upgrading the yacht, they sailed Sunsplash along the North Atlantic coast, back to their home waters of the Chesapeake.  On November 3, 2014, they departed Portsmouth, Virginia, with the Caribbean 1500 Rally for Cruisers, bound for Tortola, British Virgin Islands. 

Frank and Patty are experienced sailors, who place safety foremost in every activity.  A former commercial/instrument-rated pilot with more than 3000 flight hours, Frank holds a USCG Master 100-ton license with Sailing Endorsement, and both Patty and Frank hold STCW endorsements and are qualified in First Aid/CPR.  Patty is a life-long foodie, who has honed her talent by attending culinary classes, self-study and recipe experimentation.

BREAKFAST

Grilled spicy shrimp on a bed of cilantro and lime-scented rice topped with tropical fruit salsa, served with sautéed sesame seed broccoli florets
Grilled jerk pork tenderloin medallions served on a bed of sweet potato puree crowned with gently-spiced plantain chips and a mango coulis sauce served on broccoli florets
Grilled filet mignon served with a shallot-merlot reduction, potato Gruyere gratins and sautéed asparagus with compound butter
Grilled pineapple-glazed chicken breasts served with sautéed plantains, fresh mango salsa and grilled herbed red peppers
Island-grilled pork chops with blackberry sauce served with an arugula-mango salad dressed in a lime vinaigrette and roasted sweet potatoes with lime and cilantro
Grilled marinated mahi-mahi with pineapple salsa served with coconut rice and honey-glazed carrots
